Ingredients for 4:
- 500 grams of chopped mushrooms.
- 100 grams of onion.
- 1 clove garlic.
- 1 liter of vegetable broth.
- A few sprigs of parsley.
- 4 tablespoons of olive oil.
- Salt.
Preparation:
1. We wash the mushrooms and chop them.
2. Peel the onions and cut them into julienne strips (thin strips).
3. In a casserole we heat the oil and in it we poach the onion.
4. When it has taken color we add the mushrooms and the garlic clove.
5. We fry without stopping stirring until the mushrooms are soft.
6. Cover with the vegetable broth and let it boil for 15 minutes uncovered.
7. We crush the mushroom mixture with the help of the blender until it is creamy.
8. If it were necessary for it to remain more bound, we can add a little cornstarch.
9. Season with salt and serve in individual bowls decorated with bits of sautéed mushrooms and a little chopped parsley.
