Chicken soup with noodles and vegetables

Ingredients for 4:

  • 1 kilogram of boneless and chopped chicken
  • 1½ liters of water
  • 5 units of chopped chives
  • 1 piece of ginger sliced
  • 2 bay leaves
  • 2 tablespoons of soy sauce
  • ¼ teaspoon of Salt
  • 1 handful of fried onion (for garnish)
  • ¼ teaspoon pepper
  • 100 grams of noodles
  • 50 grams of Spinach (hoajs)
  • 2 celery stalks in slices
  • 250 grams of bean sprouts

Preparation:

1. Cook the chicken in a saucepan with water, bring to a boil and skim off the foam on the surface. Add the spring onion, pepper, ginger, salt, bay leaves and soy sauce.2. Cook over low heat for 30 minutes. Put the noodles in a heat resistant bowl.

3. Cover the noodles with very hot water and soak for 12 minutes until soft, then drain.

4. Place noodles, spinach, celery, and bean sprouts in a large bowl.

5. Pour soup into each bowl with noodles and add a few pieces of chicken, garnish with the fried onion and season with the chilli sauce.
