Garlic soup

Ingredients for 2:

  • 10 slices of stale bread
  • 2 eggs
  • 4 garlic cloves
  • 1 dessert spoon of sweet paprika
  • 1 liter of broth or water
  • 50 grams of ham in cubes
  • 1 splash of olive oil
  • 1 pinch of salt

Preparation:

1. You must cut the bread into slices. In a casserole, add a couple of tablespoons of oil over high heat and add the bread, brown it carefully so that it does not burn. Withdraw and reserve.

2. In the same casserole, add a little more oil and then lower the heat a little. Then, peel and chop the garlic, add them and let them brown a little, being careful not to burn them. Next, add the ham cubes, redo them. Lower the heat and also add the sweet paprika, stir everything carefully.

3. Place the toasted bread and add the broth or water, let it cook for about 15 minutes over medium heat. There should be a slightly thick broth for the bread. If it is very dry or you just like it more brothy, add a little more water or broth. Then add a pinch of salt.

4. When the garlic soup is at the exact point, taste the salt and rectify if necessary. Then carefully add the eggs one by one. Place one on each side and leave until slightly curdled (the clear curd should remain and the yolk slightly runny)

5. When the eggs are at the point you like, turn off the heat. If you like little curds, you should add them and turn off the garlic soup, with the heat it will finish cooking.
