Ingredients:
- 750 gr. white onion
- 250 gr. of bread
- 8 cheese slices
- 1 liter vegetable broth
- 1 tablespoon fresh cilantro (or parsley)
- a pinch of paprika
- Salt
- freshly ground black pepper
Preparation:
1. Cut the bread into slices and toast it on both sides. Reserve. Preheat the oven while we prepare the soup.
2. Peel the onions and cut them into fine julienne strips. Brown them in a little oil or 2 tablespoons of butter. Season with pepper, paprika and salt. Until you reach the desired point.
3. Add the chopped coriander. Add the broth, mix, cover and cook for 15 minutes.
4. Pour the hot soup into an ovenproof container. (do it relatively quickly, to prevent the toasts from getting soggy and completely submerged)
5. Place toast on top and cover with cheese.
6. Bake in a strong oven for approximately 15 minutes, or until the cheese is melted.
