INGREDIENTS:

- 4 pack choi
- 80 gr of dehydrated tomato
- Salt
- White pepper
- Extra virgin olive oil
FOR THE DRESSING
- 1 tablespoon light mayonnaise
- 1 tablespoon old fashioned mustard
- 1 tablespoon honey
- 1/2 apple
- 1/2 lime squeezed in juice
PREPARATION:
1.heat half a glass of water in the microwave, remove and place in the dehydrated tomatoes for a few minutes.
2.While washing and drying the pak choi, cut in half and place on top of the baking tray.
3. Place the chicken breast fillets on top and season to taste, drain the tomatoes and put them on top of the breasts.
4. Pour a trickle of oil and put in the oven for 30 minutes at 180°, it is not necessary to preheat the oven, while the whole set is being prepared, we prepare the dressing to accompany the breasts.
5.Put the mayonnaise, mustard and tablespoon of honey into a bowl, grate the apple over the sauce, blend with the mixer for a few seconds, add the lime juice and mix with a fork.
6. when the breasts are done, take them out and distribute them on plates, dress with the sauce and taste.
