Rice with Chicken and Coconut Milk

Ingredients for 4:

  • 6 garlic cloves
  • 2 onion
  • 2 splashes of white wine
  • 2 cans of coconut milk (400ml)
  • 4 whole chicken breasts
  • Water
  • curry and salt
  • 1 cup of white rice

Preparation:

1. Clean and bone the breasts, cut into squares and reserve.

2. Heat a frying pan or wok with a drizzle of oil, while cutting the onion into small squares and peeling the garlic.

3. Fry the garlic and onion until transparent. At that time add the chicken.

4. When the chicken is golden add a teaspoon of curry and stir, immediately add a splash of white wine and stir.

5. Let cook a little, until the alcohol evaporates, add the coconut milk and stir.

6. Rectify salt

7. Let the chicken cook with the mixture, about 5-10 minutes, until the chicken gains flavor. Then add the rice and stir everything and let it cook.

8. Go adding water as necessary (the water does not have to be hot, it can be cold).

9. When the rice is ready (about 20-30 minutes) remove from the heat and let it rest.
