Ingredients for 6:
- 300 grams of Beans
- 250 grams of panela cheese
- 100 grams of Chorizo
- 100 grams of Bacon
- 250 grams of Cream of cow
- 250 grams of Totopos
- 1 piece of Onion
- 3 garlic cloves
- 2 tablespoons of Salt
Preparation:
1. Wash the beans and cook them in the pressure cooker for approximately 40 minutes.
2. Meanwhile, we crumble the chorizo, chop the bacon and cheese separately.
3.Once the beans are cooked, we are going to grind them in the blender trying to make one part of beans for three of the broth where they were cooked. Add a clove of garlic and a piece of onion.
4. We fry the meats in a pan, we are going to brown the bacon and when it is well browned, we add the chorizo. To fry them we put the flame on medium heat.
5. We reduce the fire. We wait a few minutes for them to cool down a bit. Then we add the ground beans.
6. We let the Aztec soup boil over low heat so that the flavors are integrated and it is at the consistency to our liking.
7. We serve our Aztec bean soup accompanied by chopped cheese, cream or cream and tortilla chips.
You can accompany this soup with corn tortillas.
