Ingredients:
- 1 medium chicken
- 1 potato
- 2 carrots
- 1 leek
- 1/2 onion
- 1 glass of white wine
- 2 garlic cloves
- Olive oil
- Herbs
Preparation:
1. Buy a good-sized chicken and ask to have it cleaned. Once we have the chicken at home we must wash it very well and season it to taste. It is important that you adjust the size of the chicken to the number of people who are going to eat it, since there are chickens of very different sizes.
2. On the other hand, we are going to wash and peel the vegetables, the potatoes are cut into slices of half a centimeter more or less the same as the carrots. We must also peel the onions and cut them into julienne strips, we are also going to cut the leek into thin strips. The garlic cloves are peeled and crushed or cut into small pieces.
3. Now we are going to distribute all the vegetables at the bottom of the dish where we are going to cook the chicken. First we will place the potatoes, then the pieces of carrot, leek, onion and garlic. Season all the vegetables and place the chicken on top of them.
4. We turn on the oven at 190º C and wait for it to heat up. We usually preheat the oven while preparing the vegetables, so once we have them ready we don’t have to wait for the oven to heat up. It is a good habit that always helps speed up the preparation of many recipes made in the oven.
5. Drizzle the chicken and vegetables with a little olive oil, then a glass of white wine and carefully pour half a glass of water into the pan. We sprinkle the herbs with which we want to dress, we use thyme and rosemary in this case, but different ones can be used.
6. Next, we put the dish with the chicken in the oven, we leave it for approximately 1 hour, turning it halfway through, so that the chicken is done well on both sides. When it is well baked, you take it out of the oven and all that remains is to distribute the chopped chicken on the plates and accompanied with the vegetables that we have prepared.
