Ingredients for 3:
- 1 unit of onion
- 1 celery stalk
- 2 units of Carrot
- 3 leek leaves (green)
- 3 garlic cloves
- 2 pieces of lemon peel
- 100 grams of cooked black beans
- 3 tablespoons tomato sauce (fried or pureed tomato)
- 1 teaspoon of sweet paprika
- ½ teaspoon cumin
- ½ teaspoon ginger
- 1 teaspoon dried thyme
- 1½ liters of water
- 1 pinch of Salt and Pepper
- 50 grams of thin noodles (angel hair)
Preparation:
1. Wash, peel and cut all the vegetables into pieces. The leek in thick pieces and the rest in slightly smaller pieces or to taste. Remember that the lemon peel should be two wide strips that you can obtain by passing a potato peeler lengthwise.
2. Place all these ingredients together with the seasonings and water in a pressure cooker. At the moment do not add any salt or pepper, we will leave it to correct the seasoning after the first cooking. Set aside the beans and pasta.
3. Bring the pressure cooker to the heat until it beeps, then continue cooking for 10 more minutes. After this time, remove the pot from the heat, check that the vegetables are tender and then, with the help of a hand blender, blend everything. Correct the seasoning if necessary.
4. Once you have crushed everything, return the pot to the heat and then add the beans and noodles.
5. Cook until the pasta is on point. Remember that the soup can be more or less thick to taste, to modify the texture you can always add more water or vegetable broth.
Serve the bean soup with pasta, decorating with a touch of oil and a little fresh thyme.
