Ingredients:
- 4 chicken breasts
- 16 slices of Bacon
- 300 gr of French onions
- 1 glass of white wine
- 3 tablespoons of white sugar
- 1 envelope saffron
- 1 Brik of liquid cream to mount (200ml)
- 150 gr blue cheese
- Salt
- rosemary parsley
- Black pepper
- Olive oil
Preparation:
1. We will open the chicken breasts in the middle without separating them completely, we will make a large fillet.
2. We will place 4 large pieces of plastic wrap on the table, on these the bacon slices that we will distribute in each piece of paper 4 by 4, forming a rectangle with the sheets, on these we will put the breasts, season with salt and pepper and sprinkle with the finely chopped herbs
3. We roll up each piece with the help of plastic wrap and close the ends forming cylinders.
4. Pour water into a saucepan and when it starts to boil, lower the heat and put the rolls in for 15 minutes.
5. While the breasts are cooking, we will make a blue cheese cream in a saucepan, just heat the cream with the crumbled and seasoned cheese, we will leave it for about 10 minutes over low heat so that the sauce thickens.
6.peel the onions and sauté them in a pan with oil until golden brown, add the sugar and wait for them to caramelize, add the wine and let it reduce over low heat.
7. when they are tender, season with salt and pepper and add the powdered saffron, when the time for the breasts to cook has passed, remove the pan from the heat and let them warm in the water.
8.We take them out of the water and remove the film, and quickly brown them in a frying pan with a few drops of oil, the bacon will become crispy.
9. We serve on plates and accompany with chives and blue cream.
