Ingredients:
- 1 chicken cut into pieces.
- 1 large onion.
- 1 handful of almonds.
- 1 ripe tomato.
- 5 cloves of garlic.
- 1 cube of chicken broth.
- 1 piece of bread.
- 1 glass of white wine.
- Oil.
- Salt.
- Saffron.
- Laurel.
Preparation:
1. As always, the amount of chicken you need will depend on the people who are going to eat, so you should adjust it depending on whether you have more or less diners.
2. With a whole chicken you will have for about 4 people.
Buy the chicken in pieces or cut it at home, whichever you prefer. Then you have to wash it well, let it drain and add salt.
3. We are going to brown it a little on all sides in a pan with a good amount of olive oil.
4. Then, take it out of the pan and put the piece of bread in that same oil to fry it a bit, and when you take it out, put it in the blender glass.
5. Repeat the process with the almonds.
6. Finally, add the ground garlic and the finely chopped onion to the pan. Add the chopped tomato and let the flavor concentrate a bit.
7. Once it is fried, you add it to the blender glass and mix it until it is uniform.
8. Put the chicken back in the pan over low heat, add the contents of the blender glass, along with the chicken broth cube, the wine, a bay leaf and a little saffron.
9. Let it simmer for about 50-60 minutes, stirring the chicken from time to time to prevent it from sticking to us. If you see that the sauce has thickened and is thick, you can now pour the sauce over the chicken.
