Ingredients:
- 2 tablespoons of butter
- ¼ chopped onion
- 1 minced garlic clove
- 1 green bell pepper cut into julienne
- 1 cup sliced mushrooms
- 1 and ½ cups of chopped tomato
- ¼ cup tomato puree
- 1 teaspoon of sugar
- Salt and pepper to taste
- 4 Milanese chicken breast
- 2 tablespoons of olive oil
- ¼ cup sliced green olives
- 1 tablespoon chopped parsley
- ½ tsp thyme
Preparation:
1. In a saucepan, melt the butter, fry the onion and garlic until the onion is transparent, add the green pepper, mushrooms, tomato, tomato puree and sugar, mix perfectly and cook for 15 minutes.
2. Season the chicken breasts with salt and pepper, in a frying pan heat the oil and fry the breasts on both sides until lightly browned and well cooked.
3. Place the breasts in the tomato sauce and add the olives, parsley and thyme, let cook for 10 more minutes and season
