Grilled chicken breast with nuts

Ingredients for 8:

  • 700 gr of chicken breast (4 units)
  • 60 melted butter
  • 1/2 lemon
  • 60 gr breadcrumbs
  • 20 gr nuts (pine nuts, almonds and toasted hazelnuts)
  • 1 red onion
  • 150 grams of mushrooms
  • 125 gr cherry tomatoes
  • 3 sprigs parsley
  • 1 glass white wine
  • 3 tablespoons of extra virgin olive oil
  • Salt
  • Pepper

Preparation:

1. Cut the earthy stem of the mushrooms, wash them and cut them into quarters or thick slices, peel the onion and cut it into strips, wash the tomatoes and cut them in half.

2.arrange the tomatoes, onion and mushrooms in a baking dish, season with salt and pepper, sprinkle with chopped parsley and pour the wine into the oil.

3. cook the vegetables in the oven, preheated to 200° for 20 minutes

4.Then place the chicken breasts on top, lightly salt and pepper and sprinkle with half the melted butter and half the lemon juice.

5.mix the breadcrumbs, the remaining parsley and the chopped dried berries, spread the mixture over the chicken and pour the rest of the butter and lemon juice.

6. Put the dish back in the oven, lower the temperature to 180° and bake for about 15 minutes, turn on the grill and grill the breasts for a few minutes, until a crispy or golden crust is formed.
