Lettuce soup

Ingredients for 2:

  • 2 cups of Lettuce
  • 1 unit of medium white onion
  • 1 medium potato unit
  • 3 garlic cloves
  • 1 teaspoon of fresh ginger
  • 2 bay leaves
  • 1 cup of Cream of milk (200 milliliters)
  • 30 milliliters of olive oil
  • 1 pinch of salt
  • 1 pinch of Pepper

Preparation:

1. In a pot with boiling water and salt, add the lettuce leaves and cook for 2 minutes. It is important to respect the time, since otherwise they lose the color necessary for the soup.

2. As soon as they are ready, drain the lettuce leaves, add them to a bowl with water and ice, leave for a minute, drain very well and reserve.

3. In a pot with olive oil, fry the onion, garlic and ginger cut into small cubes. When the onion is translucent, add the potato and the bay leaves, mix very well.

4. It is time to add a cup and a half of water or vegetable broth, cover and cook for 25 minutes over low heat.

5. After this time, blend the soup (removing the bay leaves) with the lettuce. When a homogeneous mixture is obtained, add the milk cream, salt and pepper, blend again for 3 more minutes.

It can be accompanied with lettuce leaves, Parmesan cheese and smoked salmon
