Ingredients for 4:
- 1 chicken of 2 kilos
- 2 sweet white onions
- 1 leek the white part
- 1 large, ripe peach
- Salt
Preparation:
1.clean the chicken well of excess fat and season well on the bottom and outside.
2. We place in a baking dish unless it is very large so that the chicken is well collected with the breasts facing up, we pour half a glass of water and put in the oven previously hot at 190 °
3. We bake for 30 minutes at 180° with temperatures up and down in the lowest part of the oven.
4. We take out and turn around and place the onion, leek and peach that we had previously cut into quarters, around the chicken.
5. We put the dish back in the oven and let it bake for about 40 more minutes, after the minutes we turn the chicken and brown another 20 minutes at 190°, once done we take it out of the oven.
6.Place the chicken in a bowl and pour the onion and roasted peach into the blender.
7.If you see that there is a lot of broth left, we remove a little since we want a thick puree to remain, we grind very well, we check the amount of salt and we pour into the bowl to accompany the roast chicken.
8. We serve the chicken with the puree and a good salad.
