Ingredients for 4 people:
- 1 lb of rice
- 150 grams of chorizo
- Peppers
- Onion
- Carrot
- Garlic
- Parsley
- Olive oil
- Salt
Preparation:
1. Cook the rice in the traditional way and when it is al dente, remove it from the heat and reserve. If there is any excess water, drain it.
2. In a frying pan add two tablespoons of oil, cut the onion and garlic into small pieces and put them to fry, when they soften add the paprika cut into julienne strips, the carrot cut into small cubes and the chorizo chopped into small pieces, mix and let them fry until they soften. Season with salt to taste.
3. Add the rice and stir so that it mixes with the rest of the ingredients and the fat that the chorizo releases, continue sautéing for 5 more minutes and rectify the seasoning.
4. Serve and decorate with some finely chopped parsley.
