Ingredients for 4:
- 1 liter of water
- 150 grams of Spaghetti
- 1 unit of green onion
- 2 units of medium potatoes
- 2 units of small carrots
- 1 unit of tomato
- 1 clove garlic
- 2 tablespoons of chopped Cilantro
- 1 pinch of salt
- 1 pinch of black pepper
Preparation:
1. Cut the carrot, potatoes and tomato into small cubes. Then, chop the onion, garlic and cilantro. Reserve everything separately, since each ingredient, due to the difference in cooking time, has its opportune moment to be incorporated into the preparation.
2. Bring the water to a boil and add the onion and carrots. Let cook for 10 minutes and add the potato and noodles.
3. In a frying pan, blanch the garlic and brown it together with the tomatoes in a little oil. Season with salt and pepper.
4. When the tomato is cooked, add it to the noodle soup. Also add the coriander.
5. Mix and cook everything with the pot covered and on a minimum heat for 5 more minutes.
Serve the soup and finish the dish with a little more fresh cilantro and grated cheese.
