Tomato and basil cream

Ingredients for 5:

  • 5 units of red tomatoes.
  • 2 units of white onion.
  • 1 liter of chicken or vegetable broth.
  • 200 ml of whole or skimmed milk.
  • 20 ml of white wine.
  • 1 bundle of fresh basil.
  • Garlic paste.
  • 1 tablespoon mustard.
  • Parmesan.
  • 120 ml of milk cream.
  • Salt.
  • Pepper.

Preparation:

1. Bring a frying pan over medium heat and add a little olive oil, once you see that the oil is hot add the diced onions, garlic paste to taste, salt and black pepper. Let fry until the onions take on a transparent color for about 10 minutes.

2. Add the tomatoes cut into shells and fry these ingredients. We must take into account that this will be the base of our cream. Remove from heat and reserve.

3. Take the ingredients to a bowl and add the chicken or vegetable broth. Process until all the ingredients are integrated.

4. Return the mixture of our tomato cream and add the whole milk, the milk cream, the fresh basil and the white wine.

5. As an additional touch add a pinch of sugar Let it keep on low heat for about 10 minutes.

Serve the cream adding Parmesan cheese on top to taste and a little milk cream.
