Ingredients for 8:
- 1 kg of auyama, (it can also be celery, sweet potato,
- potatoes)
- 2 or 3 garlic cloves
- 1 tablespoon chopped cilantro or parsley
- 1 liter of milk
- 3 tablespoons of butter
- 1/2 liter of broth
- 1 sprig of basil leaves. About 6 to 8 leaves
Preparation:
1. Let’s start by peeling and crushing the garlic well.
2. When you have all the garlic ready, take them to a pot and add the selected vegetable in pieces and the basil cut with your fingers.
3.. Add the milk into the pot and also the broth. Cook over low heat until the vegetables are very soft.
4. Blend well and pass it through the strainer to eliminate lumps.
Serve it very hot and garnished with finely chopped coriander or parsley and a teaspoon of butter or margarine.
