Broccoli and mascarpone cream

Ingredients for 4:

  • 1 broccoli
  • 200g onion
  • 200g coconut milk
  • 200 ml Vegetable broth
  • Salt
  • ground black pepper
  • 125 g Mascarpone cheese

Preparation:

1. Peel and chop the onion.

2. We remove the leaves from the broccoli trunk and chop.

3. We put the vegetables in a saucepan along with the coconut milk and the vegetable broth. Season to taste and cook over medium heat for 30 minutes.

4. Add the mascarpone and blend with a blender.

We serve immediately, decorating with a drizzle of liquid cream and accompanying croutons, seeds or any other chunks that we like.
