Ingredients
- 6 leaves of romaine lettuce
- croutons to taste
- 1/2 garlic
- 1/2 teaspoon dijon mustard
- 1/2 lemon juice
- Salt to taste
- Pepper to taste
- 1 egg yolk
- Olive oil to taste
- 4 capers
- Splash of Worcestershire sauce
Let’s cook
1. Soak the lettuce in vinegar to disinfect.
2. For the dressing, in a bowl or mortar, crush all the ingredients except the egg yolk and olive oil.
3. When they are all integrated, add the egg yolk and beat with a balloon whisk while adding the olive oil.
4. We are looking for a light mayonnaise type consistency. Ideally, add Parmesan cheese.
5. Brown the croutons on a griddle.
6. Dip lettuce leaves in bowl of dressing and add croutons.
