Cold avocado and lemon cream

Ingredients for 2:

  • 1 avocado
  • 1 lemon
  • 150 milliliters of vegetable or chicken broth
  • 1 splash of olive oil
  • 1 bunch of Cilantro
  • 1 pinch of Salt and Pepper

Preparation:

1. Cut the avocado in half and remove all the pulp. Place this in the blender jar and process together with the broth, seasoning to taste with a pinch of salt and pepper.

2. Add the lemon juice along with a handful of coriander leaves. Blend everything again until you get a smooth and homogeneous cream.

3. To finish, add a splash of olive oil and process the mixture again. Take the cream to the fridge for a few minutes and serve so that it is very cold.
