Cream of mushroom soup

Ingredients:

  • 2 butter spoons
  • 1/4 onion chopped
  • 230 grams of fresh mushrooms
  • 1 minced garlic clove
  • 3 tablespoons all-purpose flour
  • 2 cups of vegetable or chicken broth
  • 1 cup milk or 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation:

1. Melt the butter in a medium saucepan over medium heat, then add the onions and mushrooms; stir.

2. Sauté until the mushrooms have released their liquid and started to brown. Then add the garlic and sauté for about 1 minute.

3. Add the flour and cook for 1-2 minutes until golden.

4, Pour in the broth and stir vigorously to combine (make sure there are no lumps). Then add the milk, salt and pepper.

5. Bring to a simmer and cook uncovered for about 5-6 minutes until desired consistency is achieved.
