Ingredients
- 2 cups romaine lettuce cut in strips
- 1 grilled chicken breast cut into strips
- 2 tomatoes cut in cubes
- Pesto sauce
- Grilled chicken
- Filleted chicken breast
- Lemon juice
- Crushed garlic
- Oregano
- Salt and pepper to taste
- Olive oil
- Pesto sauce
- 1 cup fresh basil
- 1 clove garlic
- 1/2 cup olive oil
- To taste grated Parmesan cheese
- 1/2 cup parsley
- To taste salt and pepper
Let’s Cook
1. **Preparation of the grilled breast**: season the breasts with lemon juice, crushed garlic, oregano and salt and pepper.
In a very hot frying pan add a little olive oil and then put the breasts until golden brown on each side.
2. **Preparation of the pesto sauce**: Grind the basil with the garlic clove and a little grated Parmesan cheese until it becomes a paste.
3. Add a little olive oil and continue blending until a homogeneous consistency is obtained, then add the rest of the olive oil little by little, the Parmesan cheese and finally season with salt and pepper.
4. **Salad. Wash the romaine lettuce and dry it well, then mix it with the tomatoes. Add the pesto little by little, until well seasoned.
5. At the end add the chicken breasts in strips and a little parmesan cheese.
