Vegan apple and celery cream

Ingredients for 4:

  • 2 branches of fresh Celery
  • ½ piece of Onion
  • 1 piece of green apple
  • 1 tablespoon of corn starch
  • 2 tablespoons of Margarine
  • 2 cups of vegetable broth
  • 1 pinch of Pepper
  • 1 pinch of salt

Preparation:

1. Sauté the onion together with the finely chopped celery in a tablespoon of margarine.

2. Once ready, place them in the blender together with the vegetable broth and the apple in pieces, and blend everything until obtaining a homogeneous sauce.

3. On the other hand and meanwhile, we put the corn starch to dissolve in half a cup of cold water.

4. Now in a saucepan we melt the excess margarine. Once liquid, add the mixture that we have just blended and let it cook for approximately 6 minutes.

5. Once it is boiling, add the dissolved corn starch and mix, stirring constantly until the vegan celery cream thickens. Once it feels thick, we remove it from the heat. We also add a pinch of pepper and salt to season.

We serve our hot cream that we can accompany with a little chopped coriander and some garlic bread croutons for example.
