Vegetable Caesar Salad

Ingredients

  • Various lettuces
  • Croutons
  • 6 cloves of garlic
  • Finely chopped parsley

Dressing

  • 200 ml olive oil
  • 1 egg
  • 3 anchovy fillets
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
    3 cloves garlic
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup Parmesan cheese
  • Salt and pepper to taste

Let’s cook

1. Wash and dry the lettuce very well. Chop with your hands so that it does not wilt. Set aside

2. We take our croutons to a frying pan and add a teaspoon of butter, 6 cloves of crushed garlic and finely chopped parsley. Let them brown and set aside.

3. We take all the ingredients except the oil to the blender and process until they are completely integrated. At this point we add the oil slowly, in a trickle, using the lowest speed of our blender. We will see how our sauce takes a beautiful color and a smooth and creamy consistency.

4. We add the necessary amount of dressing to our lettuce, add the croutons and sprinkle with Parmesan cheese.
